Ingredients
  

  • 200 g whole wheat pasta
  • 1 tbsp olive oil
  • 1 cup mushrooms sliced
  • ½ cup plain Greek yogurt
  • 2 tbsp chopped fresh parsley
  • salt and pepper to taste

Instructions
 

  • Cook pasta according to package instructions; reserve 1/2 cup pasta water.
  • Heat olive oil in a skillet, sauté mushrooms and garlic until tender.
  • Remove skillet from heat and stir in yogurt.
  • Add pasta and reserved water gradually, tossing to coat.
  • Season with salt, pepper, and fresh parsley before serving.

Notes

Use any pasta shape you like, including gluten-free varieties. If you prefer a richer flavor, add a sprinkle of parmesan or nutritional yeast before serving. Avoid overheating the yogurt to prevent curdling — always stir it in off the heat.
